Not a Princess

So you remember that S is going to dress up as Cinderella for Halloween, right? But when you pee in your princess dress 7 minutes before we have to leave for a fall carnival...you are a cowgirl. At that moment your mama turns into SuperMama as fast as Peter Parker turns into Spiderman and says "Open your closet and bring me your dress up bucket!" Then you are not a princess.... She didn't resist. She had no choice. What? Go as a wet Cinderella? Gasp! Wet? Not a princess!

Kate's Pumpkin Everything Cookies

I made these last night and I think I have eaten, oh, about 10 today. Easily. I just finished off four before sitting at the computer. Here's the recipe, because any good addict will bring others down with her!

My Pumpkin Everything Cookies

1 cup butter, softened
1/2 cup sugar
1/2 cup packed brown sugar
1 egg
1 cup canned pumpkin
1 cup all-purpose flour
1 cup whole wheat flour
1 1/2 tsp cinnamon
1 tsp baking powder
1 tsp ground ginger
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp ground nutmeg
1/4 tsp ground cloves
--The "everything" part! You can make your own combination. This one is my favorite:
- 1 cup each: chocolate chips, oats, slivered almonds, dried cranberries

I also will use 1 cup raisin-less granola instead of the oats. YUM.

Other combinations might include: white chips, granola, walnuts, craisins or golden raisins- you get the idea (chips, oats/crunch, nuts, dried fruit)

1. Mixer the butter and sugar together. Add egg and pumpkin. Mixer.
2. In a separate bowl, combine the rest of the ingredients except the "everything" (flours, cinnamon, baking powder, ginger, salt, baking soda, nutmeg, and cloves)
3. Gradually add it to the pumpkin mixture. Mixer together.
4. Stir in your "everything"
5. Drop by tablespoonfuls about 2 inches or so apart. They really don't spread out that much when baking.
6. Bake at 350 degrees for 15 minutes.

Also, one can of pumpkin is just less than two cups. So sometimes instead of opening a second can, I make the second batch with a bit of applesauce to compensate for the pumpkin shortage.

Recipe of the Moment

Where has this recipe been all my life? Ok, all my adult life? I don't know if I would have eaten these as a kid because they are too similar to nuts, which I used to dislike.

Get a can of garbanzo beans/chickpeas..drain, rinse, pat dry.
Put on a cookie sheet.
Drizzle with olive oil. Roll to coat.
Bake at 400 degrees for 35 min. Toss a few times during baking.
Cool. Eat.

My new favorite snack!
I tossed them with that dry mix for ranch dressing and THEN Shawn liked them. Options are endless.

Ready Set Bowl

A great family activity that we discovered a couple weekends ago. N and S earned coupons for free bowling from the summer reading program at the library. We decided to cash them in and see what would happen. Food was great. Not crowded. Clean shoes. Smoke Free. A great choice for a rainy day.
